Gingered Pumpkin Soup

We hosted our folks at our house for lunch to celebrate Mother’s day. We thought our parents will definitely like the smooth, creamy feel of our pumpkin soup. Not wanting to repeat our previous pumpkin recipes, we added a “seniors-friendly” ingredient to make our soup outstanding.

Yes, it’s ginger.

Bly says this feels like a nice, cosy desert. The kind of hot desert served that will definitely warm your heart in winter and in rainy season.

Ingredients: Boiled pumpkin, ginger, thyme, salt, onion, garlic, milk.

We add only 2 small slices of young ginger to make this soup served for 8. Just a little bit to add that mild, tingling spicy taste to the soup.
